Scallops can be delicious when cooked to perfection, but what is a fool proof way to cook them!? It is easier thank you think and you can impress someone with your new cooking skill.
While on a recent trip to the Caribbean on Princess Cruises, I enjoyed many of the restaurants on board the ship. One night we had scallops and I brought the cookbook I got onboard the ship home with me to perfect their recipe.
You can have them on their own as an appetizer, mixed in with pasta or whatever way you want to enjoy them. But most importantly, you have to figure out how to cook them the right way.
So here is the recipe straight out of Princess Cruises Cookbook.
SCALLOPS: serving size 6
- 36 scallops
- salt and pepper
- vegetable oil for searing
- 1 lemon, cut into halves
In a sautee pan, heat a few table spoons of oil over high heat. Season the scallops well with salt and pepper. Sear the calops on both sides until well browned. Recude the heat moderately and continue to cook until the scallops approximately 6 minutes. Squeeze the fresh lemon juice over the scallops when done. They should be plump and juicy when cooked. If they are over cooked, they will feel dry and tough.
